Switching to the release
Betas and releases read the same worlds. When the release comes out, swap the beta's file for the release's and play on: nothing to convert, nothing to start over.
Everything you earned stays
Tamed mounts keep their name, level, skills, coat and what they carry. Your journal and quest log keep every entry.
Changes since the beta are handled
A rebalanced mount fits its new stats. A removed skill gives its points back to spend again. Anything a smaller saddlebag no longer holds is handed back to you, and a renamed item becomes its new self.
A mount that isn't out yet waits
Switch before every mount in your beta is released and those mounts sleep where they stand, then wake as you left them in the release that brings them. Meanwhile their creative spawn eggs don't keep, and their advancements and settings start afresh.
